Hot Cheesy Spinach Dip

Oh so delicious!

 I have people over quite often, and every one of them takes comfort in knowing that when they get here...my spinach dip will be waiting for them! My favorite way to eat this dip is with vegetable crackers, but alot of people use rye or pumpernickle bread.

I have never understood why some people put their dip in a bread bowl. I know that a hollowed out bread round with the chunks for dipping is pleasing to the eyes, however i have always found that its messy, and you have wasted the bowl once your done. you cant save it, and theres no way im eating that soggy bread the next day!

So here is what you will need....

  •  2 tablespoons butter.
  • 1/4 cup chopped onion
  • 2 cloves of garlic minced or 1 tablespoon garlic minced.
  • 1 tablespoon all-purpose flour
  • 1 3/4 cups half and half.
  • 2  9 ounce packages frozen chopped spinach that you have thawed, and drained well.
  • 1  cup shredded chedder cheese.
  • 1  1 ounce package dry vegetable soup mix.
  • 1/4 cup shredded parmesan cheese.

What you do...

  1.  Preheat your oven to 425 degrees.
  2. Melt butter in a large saucepan over medium heat.
  3. Add onion and garlic.
  4. Stir until onion is crisp/tender and garlic is fragrant (2-3 minutes)
  5. Stir in the flour cooking and stiring for an aditional minute.
  6. Add half and half.
  7. Stir constantly until mixture boils and thickens (about 2 minutes)
  8. Remove saucepan from heat.
  9. Stir in chopped spinach, chedder cheese, and vegatable soup mix.
  10. Spoon dip into a 1 quart casserole dish, and sprinkle with parmesan cheese.
  11. Bake dip until it is bubbly, and cheese is melted (about 10-15 minutes)

Serve this dip warm. It is sure to warm tummy's and open hearts for light conversation.

And so...

 This recipe makes 8 servings. Instead of multiplying the recipe, i suggest preparing 3-5 dishes, holding off on the oven, and just putting your extras into the fridge. This dip does not last more than 20 minutes. Your guests will gobble it up. With your extras in the fridge, you will have enough on standby to keep pumping out hot servings of this lovely spinach dip.

You can dip almost anything into this spinach dip incliding crackers, chips, various breads, vegetables...my husband dips chedder cheese slices into it! I have a girlfriend who varies this recipe and will only set out tortia chips with it. (which is indeed very yummy)

So weather it be for a crowd, a couple, or just you, this dip is extrememly satisfying and delicious. It makes you feel comfortable, like cuddling under a blanket on a cold winters day.

So snuggle up, have some dip, and enjoy!

haha, thats why i always have about 5 or 6 prebaked dips in the refrigerator! I have introduces many an appetizer to my group, but nothing has ever beaten my hot cheezy spinach dip!

Prasetio- You should def show it to mum, and have her make it, just to try it! youll ba amazed at how delicious this recipe is! My mother in law makes this dip cold, and uses mayonaise, and sour creme. I wouldnt reccomend that, unless you want to spend the next day feeling ill.
